Homemade bacon

The best kind of bacon is homemade bacon.

For pork bacon, ask your butcher for fresh pork belly, which lies on top of the spare ribs and is called ‘side bacon’ or ‘streaky bacon’. There’s also beef bacon, which like its pork cousin is simple to make. While it’s a healthier alternative to pork bacon, being about 90 per cent lean, it’s a little drier than pork.
